Snails with Autumn Fruits

With the month of October rainy afternoons and cozy snacks comes accompanied by a hot drink. So, almost at the end of the month, our Nutritionist suggests some delicious Snails with Autumn Fruits. In addition to being delicious, they are very easy to make.

See below the ingredients you will need, do your shopping and venture into the kitchen. You will certainly be surprised!

 

Yeast dough - Ingredients:

100 g of wheat flour

15 g of fresh yeast

90 ml of milk or plant-based drink

 

Second dough - Ingredients:

400 g of wheat flour

300 g white spelled flour

50 g of almond flour

100 g of brown sugar

100 g of butter

50 ml of olive oil

90 ml of milk

3 eggs

75 g of boiled pumpkin puree

1 vanilla pod

10 ml of liqueur wine (Port or Madeira wine type)

 

Filling - Ingredients:

2 apples

2 conference pears

100 g of raisins

150 g of walnuts

150 g of almonds

Zest of an orange

1 tablespoon of honey

1 tablespoon of rice honey

1 tablespoon of date syrup

Spices to taste (cinnamon, ginger, nutmeg)

 

Preparation mode:

This recipe is made in three steps. To make the yeast dough, start by putting the wheat flour, fresh yeast and milk or vegetable drink in a bowl, and stir very well, creating the shape of a ball. Reserve the mixture for approximately 10 minutes, until it doubles in size.

Then we move on to the second dough. In a large bowl, place the wheat, white spelled and almond flours, brown sugar, olive oil, milk, cooked pumpkin puree, butter, vanilla bean, eggs and liqueur wine. Mix everything very well and then add the yeast dough (already leavened). Mix everything until you get a homogeneous mass and finally place it in a bowl with flour. Let rise for approximately 1 hour or until doubled in size.

The last step is the filling. In a bowl, place the apples and pears cut into small pieces, the walnuts, raisins and almonds previously chopped, the honey and date syrup, the zest of an orange and the spices. Let it macerate.

When the dough, previously prepared, is well risen, spread it out on a surface sprinkled with flour and place the filling, leaving a margin at one end of about 3 to 4 cm. Roll it up, finishing the process at the unstuffed end, and cut it into slices. Arrange them on muffin trays sprinkled with flour, cover with a damp cloth and let rise for about 20 minutes. Then place them in the oven for 25 to 30 minutes, or until cooked through. Let it cool down and enjoy these wonderful Curls with Autumn Fruits.

If you want to take a little more risk and give your curls a finishing touch, put Greek yogurt seasoned with tangerine zest over them.
