Healthy Picks: Tuna and Avocado Wrap

A quick, nutritious and ideal recipe for those days when you don't want to spend a lot of time in the kitchen. That's this month's Healthy Choice.

In August, Termas de Chaves propose a Tuna and Avocado Wrap, a suggestion filled with fresh foods that translate into flavor and practicality. To take to the beach or to work, this light but vitamin-rich meal brings together the simplest and most flavorful ingredients: tuna, avocado, onion and yogurt and mustard mayonnaise.

Tuna and Avocado Wrap

– 200 g of tuna

– 1 large avocado

– 120 g of grated carrots

– 2 chopped celery stalks (optional)

– ½ red onion

– 1 crushed garlic clove

– Pepper mixture q.s.

– 4 tortillas

– 100 g of arugula

– 4 lettuce leaves

– 200 g of cherry tomatoes

Yogurt and Mustard Mayonnaise

– 1 natural yogurt

– 40 ml of oil

– 60 g of mustard

– 1 tablespoon of lemon juice

– 1 crushed garlic clove

– 2 chopped anchovies

– Mixture of peppers q.s.

Preparation Mode

Start by preparing the mayonnaise by mixing all the ingredients in a bowl until you get a smooth mixture.

In a large bowl, add the tuna and crushed avocado, using a fork. Then add the grated carrots, chopped celery and onion, crushed garlic, yogurt mayonnaise and mix to the above preparation. Reserve.

For plating, place the tortilla on a plate, place the lettuce leaf on the tortilla and put ¼ of the preparation and spread it over the lettuce, cover with some cherry tomatoes and arugula leaves and roll the tortilla carefully to create a cylinder, ie a wrap. Repeat until there is no more stuffing left.
