Healthy Choices: Quince and Almond Muffins

Before making the traditional marmalade, save six quinces and enjoy some tasty and nutritious muffins! In October, we want you to enjoy the benefits of seasonal fruit and, for this purpose, the Healthy Choice of the Month combines this fruit so characteristic of the season with almonds.

The proposal of Termas de Chaves in the starting month of autumn is a perfect accompaniment, full of healthy ingredients, for a delicious snack. Rich in vitamins and fiber, quince eliminates harmful substances to the body and provides a feeling of relief and relaxation. With a low caloric amount, the fruit is also known to fight problems such as anemia, bad cholesterol, diarrhea and tiredness. Nutrition and flavor in one fruit!

To accompany the quince and make up this healthy dessert, we include almonds, coconut oil, oatmeal and orange zest. So, we added even more fresh and healthy food to this proposal.

Quince and Almond Muffins

• 6 quinces

• 5 tablespoons of coconut oil

• 3 tablespoons of honey sugar

• Juice of an orange

• One orange zest

• Cinnamon powder q.s.

• 100 g of agave

• 5 tablespoons of brown sugar

• 40 g of coconut oil

• 40 g of extra virgin olive oil

• 5 eggs

• 110 g of oatmeal

• 110 g of spelled flour

• 3 tablespoons of milk

• 100 g of crushed roasted almonds

• 1 teaspoon of cinnamon



Preparation mode:

In a skillet place the 5 tablespoons of coconut oil and heat until melted. Add the sliced ​​quinces and sauté a little, stirring. Then add honey and cinnamon. Wrap very well and let the quince become tender but not melting. Reserve.

Preheat oven to 180°C.

For the dough, in a bowl, add the sugar and agave with the coconut oil and olive oil until you get a smooth cream. Then add the eggs one by one and beat well between each addition.

Add the zest and orange juice, cinnamon and milk and mix well. Finally, add the almonds and flour and mix carefully with the remaining ingredients.

Line the muffin molds with parchment paper. Put a little dough on the bottom and then a few slices of the quince preparation. Then add a little more dough and finish, on top of this last layer of dough, with the remaining slices of quince and a whole almond.

Place in the oven to bake for approximately 15 minutes, or when the dough is cooked.
