Breakfast for Mother's Day
What better way to start the day than a late breakfast to be enjoyed with the people we care about most? On Sunday, Mother's Day, we suggest a healthy brunch, specially designed for the next surprise. Composed of fruit pancakes, yogurt with muesli and fresh fruit and citrus juice, it is a delicious suggestion. And voila! Prepare a table or board and enjoy your mother's company! If you want a surprise on another level, prepare a basket from another level and take the opportunity to prepare the Brunch you prepared in the Public Garden. Fruit cake Ingredients: • 500 g of apple • 150 g of carrots • 80 g of dried apricots • 3 tablespoons of cane honey • 1 orange (zest and sumo) • Spices (cinnamon, turmeric, nutmeg…) q.s. • 5 eggs • 1 tablespoon of brown sugar • 100 ml of extra virgin olive oil • 150 g of almond flour • 50 g of oat flour • 100 g of spelled flour • 100 g of whole wheat flour • 1 teaspoon of baking soda • 1 teaspoon of baking powder Preparation mode: Start by peeling the apple and cutting it like a julienne, peeling the carrots and grating it, and finally the dried apricots, which must also be cut into small pieces. Place everything in a bowl with either cane honey, or orange juice and zest and spices. Let marinate. Turn on the oven to a temperature of 180º C. Then, beat the eggs and sugar with an electric mixer until the mixture is fluffy. Add the oil, flour, baking powder and baking powder. Finally, it is prepared with marinade. Place the dough in a 24 cm diameter mold and bake in the oven for about 45 minutes. With a toothpick, check if the cake is cooked. Let cool. Serve with orange or tangerine jam.
Fruit Pancakes Ingredients: 350 ml of skimmed milk or plant-based drink 10 ml of lemon juice 1 large egg 1 banana 1 tablespoon of honey or agave 50 ml of olive oil 100 g of oat flour 100 g of quinoa flour 100 g wholemeal flour 1 dessert spoon of baking powder 150 g of blueberries Coconut oil q.b. Preparation mode: Start by heating the milk and adding the lemon juice. Reserve. In a bowl, beat the egg, the crushed banana, the honey and the oil, then add the remaining ingredients. Then add the milk mixture and mix well until obtaining a homogeneous mass. In a frying pan, put the coconut oil and, when it is hot, pour about two tablespoons of batter. Let it cook for approximately two to three minutes on each side. Serve with sliced fruit and Greek yogurt or organic fresh cheese. Yogurt with muesli and fresh fruit In a bowl, place a yogurt and decorate it with muesli and fresh fruit to taste. Natural citrus juice Squeeze some citrus fruit to taste (clementine, lime and lemon for example) and pour the juice into a glass. Garnish with a slice of orange and lemon.
