Alheira roll with apple, spinach and walnuts

In the month marked by the return of Feira Sabores de Chaves to the face-to-face registration and which brought thousands of people to our city, the Healthy Choice of Termas de Chaves honors this endogenous product of the region.

With the smokehouse as the star, alheira is the protagonist of this month's proposal. The combination of this sausage with apple, spinach and walnuts is to eat and cry for more!

In addition to being delicious, it is a dish rich in vitamins A, C and E, with proteins of high biological value and minerals such as calcium and potassium. Thanks to spinach, it also has antioxidant and anti-inflammatory properties.

This recipe was presented last Saturday by the nutritionist Filipe Ferreira, at the Showcooking included in the Sabores de Chaves event.

Let's go to the kitchen and get to work!


Crepe dough:
3 eggs
3 tablespoons of tapioca starch
Pepper mix q.b.

Alheira filling:
1 red onion
2 garlic cloves
1 alheira de Chaves
200 g of spinach
2 apples
80 g of walnuts
Extra virgin olive oil q.b.

Preparation mode:
In a bowl, place the 3 eggs and beat everything very well. Then add the 3 tablespoons of tapioca starch, season with a mixture of peppers and beat everything again until you get a homogeneous mixture.
In a non-stick skillet place a portion of the mixture and let it cook for a few seconds and turn. Repeat this process until both sides of the dough are golden brown.
To prepare the stuffing, put a drizzle of olive oil in a frying pan and sauté the garlic and chopped red onion. After browning, add the chopped alheira without the skin and let it cook, in order to involve all the preparation. Then add the spinach leaves and the apples previously cut into cubes. Once both have softened, remove from the heat and add the roughly chopped walnuts.
Let it cool down a bit and divide the alheira mixture into the crepes. Then roll them up carefully and season with a drizzle of honey.
This recipe can become the perfect meal when accompanied by a salad!
